fibre vs cat7

That sounds a sensible approach.
The basic advantages of fibre over UTP copper cabling are:
1) Extended distance (but choose the type of fibre carefully for high speed links such as Gigabit)
2) Electrical isolation (important safety consideration when taking networks between buildings or near high voltage equipment)
3) Immunity to electromagnetic and/or induced noise (doesn't pick it up or radiate it so useful in industrial environments)
4) Security (Harder to tap and intercept data)
Other than that a copper link is easier and cheaper to install
